  • 2 cups multigrain pancake & baking mix (i use trader joes)
  • ¼ cup dark brown sugar
  • 1 cup pumpkin puree
  • ¼ teaspoon salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 3 eggs
  • 4 tablespoons of unsalted butter (melted)

  • Slivered almonds (lightly toasted)- garnish (walnuts are also great with this dish)
