- * 1 cup long grain rice
- * 2 1/4 cup water
- * 1 tablespoon butter
- * 1 bay leaf
- * fat pinch salt
- * 1/4 cup chopped cilantro leaf
- * fresh lime juice, salt, and pepper to taste
- for the sweet potato
- * 2 very large or 3 medium sweet potato, chopped
- * 1 large yellow onion, thinly sliced
- * 2 tablespoon coconut oil
- * 2 tablespoon real maple syrup
- * 1 teaspoon smoked paprika
- * 3/4 teaspoon chili powder
- * salt and pepper
- for the black bean
- * 2 can black bean
- * 1 1/2 teaspoon chili powder
- * 1/2 teaspoon cumin
- * 2 clove garlic, minced
- * fat pinch sugar
- * salt and pepper, to taste
- for the burrito
- * 2 cup chopped or shredded rotisserie chicken
- * 2 cup shredded monterey jack cheese
- * 10 large burrito tortilla (i used spinach tortilla)
