- Mashed potatoes :
- 1 1/2 lbs. yukon gold potatoes (peeled and quartered)
- Water
- 1/2 tsp salt
- 1/4 cup heavy cream or 1/4 cup half and half
- 2 tbsp butter
- 2 tsp salt to taste
- 1 cup chicken broth
- 3 tbsp parmesan cheese (grated for mashed potato topping)
