- 6 cups (675 g) shredded pumpkin, from 1 small pie pumpkin, about 2 1/2 lb (1.2 kg)
- 1 cup (60 g) panko breadcrumbs
- 3/4 cup (180 ml) olive oil
- 1/2 cup (100 g) white sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1 package phyllo dough, thawed overnight in the fridge if frozen
