- 2 carrots, sliced
- 2 large leeks, white and pale green parts only, split lengthwise, sliced
- 2 lb (900g) baking potatoes, peeled and chunked
- 2 tbsp all purpose flour
- 2 tbsp chopped parsley
- 2 tbsp vegetable oil
- 4 tbsp butter
- Salt and freshly ground black pepper
