- 3 thick slices smoked bacon, sliced and diced into quarter-inch pieces
- 1 andouille sausage (about 8 oz.)
- 8-10 oz. boneless, skinless chicken breast, diced into one-inch cubes
- 1 large sweet onion, diced
- 1 medium bell pepper, diced
- 2 celery stalks, diced
- 2-3 cloves of garlic, minced
- 2-3 cups chicken stock
- 1 15oz can of diced tomatoes (unseasoned)
- 2 tsp. Cajun seasoning
- 1/4 tsp. cayenne pepper
- 1 cup long grain white rice
- 1 1/2 Lbs. large shrimp, peeled and deveined
