Ingredients
- 1 Tbsp olive oil
- 12oz kielbasa or andouille sausage, sliced on the diagonal
- 1 small onion, diced (about 1 heaping cup)
- 1 bell pepper, diced (about 1 heaping cup
- 2–3 stalks celery, diced
- 2–3 cloves garlic, minced
- 1 Tbsp Cajun seasoning
- 1 (14oz) can diced tomatoes (I like fire-roasted), undrained (about 1 3/4 cups)
- 1/2 cup-3/4 cup vegetable or chicken broth
- 1 (12oz) package cauliflower rice (frozen or fresh)
- 8 oz. shrimp
- 2 green onions, sliced
- 2–3 Tbsp minced cilantro or parsley (optional)
- salt and pepper, to taste.
