Ingredients
- 1 Cup green lentils, rinsed and drained
- 2 Cup water
- 1 Count large shallot, minced
- 2 Count garlic cloves
- 1 Teaspoon dried basil
- 1 Teaspoon dried oregano
- 0.5 Teaspoon fresh thyme (or 1 tsp. dried thyme), I recommend using fresh
- 0.25 Teaspoon red pepper flakes
- 0.25 Cup green bell pepper, deseeded and chopped
- 0.25 Cup red bell pepper, deseeded and chopped
- 1 Can diced tomatoes, preferably BPA and salt-free
- 0.25 Cup fresh parsley, chopped
- 0.5 Teaspoon salt
- 1 Count 18 oz. tube of premade Polenta (I got mine at Trader Joe's)
