- 2 tablespoons bacon grease or canola oil
- 1 1/4 pound of andouille smoked sausage, sliced into ½ inch pieces
- 1 1/2 pounds boneless chicken thighs, cut into 1 ½ inch pieces
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 3/4 pound ground pork
- 1 large yellow or white onion, diced
- 3 stalks celery, diced
- 1 green bell pepper, diced
- ½ red bell pepper, diced
- 1 jalapeno, seeded and finely diced
- 6 cloves of garlic, minced
- 1 1/2 tablespoons Cajun seasoning
- 3 thyme sprigs
- 2 Bay leaves
- 6 to 7 cups chicken stock
- 3 cups long grain rice, rinsed and drained
- 1 bunch green onions, thinly sliced
