Ingredients
- 2 lbs. ground beef or turkey
- 1 cup chopped carrots
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onion
- 8oz. can tomato sauce
- 1/2 salsa verde
- 1 avocado or 1/2 cup wholly guacamole
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 4 large sweet potatoes
- 4-5 tablespoons full fat coconut milk (fat from the top of 1 can)
- 1 tablespoon ghee
- salt and pepper to taste
