Ingredients
- * 1 tbsp olive oil
- * 1 green bell pepper, diced
- * 2 celery stalk, diced
- * 1 medium onion, diced
- * 3 garlic clove, minced
- * 1 1/2 cup diced tomato (about 3 tomato or a 14 ounce can)
- * 4-5 cup vegetable broth
- * 2 tbsp paprika
- * 2 tbsp ground cumin
- * 2 tsp ground black pepper
- * 1 tsp dried thyme
- * 1 tsp dried oregano
- * 2 tbsp cayenne pepper hot sauce (adjust to heat preference)
- * 2 cup long grain brown rice
- * 1 3/4 cup cooked or 1 14 oz can red kidney bean, drained
- * 2 cup chopped vegan sausage (optional, i like field roast brand)
- * 2-3 scallion, chopped
