Ingredients
- 1/2 cup fingerling potatoes
- 6 medium radishes (or 2 handfulls. I’m sorry, my kitchen scale needs a new battery)
- 3 small carrots
- olive oil
- sea salt, black pepper
- 1 celeriac bulb (also called celery root)
- 1 medium apple
- 1/4 cup chicken stock
- 2 sprigs of thyme
- 1 tablespoon unsalted butter
- 1/2 tablespoon apple vinegar (optional)
- 2 sausages (I used Italian-herbed pork sausages)
- 1 white onion
- 3-4 ounces goat cheese
- grated Parmesan (optional)
