- 1 tablespoon tomato paste
- 1 leek, halved lengthwise and sliced
- Salt and freshly ground black pepper
- 1 tablespoon melted butter
- For the potato topping:
- 1-1/2 lbs Russet potatoes, peeled and cubed
- 4 tablespoons (1/2 stick) butter
- 1/4 cup cream
- 1/4 cup milk, plus more as needed
- White pepper
- 1 egg yolk
