- 1 pound Shrimp, raw, peeled and deveined
- 1 pound Chicken Thighs or Breast, (boneless and skinless)
- 3 Tablespoons Olive Oil
- 2 Tablespoons Spice Rub (Recipe link here) or creole seasoning
- 1 large onion, chopped finely
- 3 stalks celery, diced
- 6 carrots, peeled and diced
- 1 Red Bell Pepper, innards removed, diced
- 1 Green Bell Pepper, innards removed, diced
- 6 cloves garlic, minced
- 1 can (13.5 oz or close to it) diced tomatoes (use juice)
- 4 bay leaves
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon Tabasco Sauce
- 1.5 cups rice, (uncooked)
- 6 cups Chicken Broth
- 3 andouille Sausage, sliced to ⅓" thick
