Simnel cake French toast
Ingredients
- 50 g (2oz) unsalted butter
- almond extract, to taste
- 1 tbsp. icing sugar, plus extra for dusting
- 3 large eggs
- 175 mL (6 fl oz) single cream
- 2 tbsp. caster sugar
- 1/4 tsp. ground nutmeg
- 2 tsp. mixed spice
- 1 tsp. vanilla extract
- 8 slices raisin bread (we used Warbuton's)
- 2 tbsp. butter
- maple syrup or honey, to serve
- streaky bacon, to serve, optional
