Ingredients
- 3 large red peppers, seeds removed and halved
- 1 red chilli, seeds removed and halved
- 1 tsp olive oil
- 1 small onion, finely chopped
- 1/2 tsp ground coriander
- 1 tsp ground cumin
- 1 x 400g/14oz can chickpeas, drained and rinsed
- ½ garlic clove, crushed
- ½ unwaxed lemon, juice and zest finely grated
- 1 tbsp pomegranate molasses (optional)
- ½ tsp sea salt
- freshly ground black pepper, to taste
