Ingredients
- peanut or vegetable oil (for cooking)
- 7 oz chestnut or portobello mushrooms (sliced)
- 1 tsp ginger (crushed)
- 2 tsp garlic (crushed)
- 4 spring / green onions (sliced, with the green and white ends seperated)
- 1 cup kale (approximate - more or less is fine!)
- 2 portions udon noodles (I like precooked "straight to wok" style for ease)
- 1 handful cilantro (fresh coriander) leaves
- 2 tbsp gochujang paste
- 2 tbsp honey
- 1 tbsp mirin
- 1 tbsp soy sauce
- 2 tsp toasted sesame oil
