- ¼ cup organic apple cider vinegar
- 2 tsp dijon mustard
- 1 tbsp maple syrup (or date paste, see Chef’s Notes)
- ¼ tsp onion powder
- 1 tbsp water
- 2 cups butter or red leaf lettuce (or other lettuce of choice, chopped)
- 1 cup organic red bell pepper (diced)
- 1 cup organic edamame
- ⅓ cup red onion (diced)
- ½ cup radish (sliced)
- ¼ cup sunflower seeds
- ¼ cup cilantro (optional chopped)
- ¼ cup microgreens (optional of choice)
