- 2 bay leaves
- 1 teaspoon dried oregano, Mexican oregano preferred
- 8 dried guajillo chiles, stems and seeds removed
- 4 dried ancho chiles, stems and seeds removed
- 2 cloves garlic
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cloves
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
- 2 tablespoons vegetable oil
- 1 large white onion, chopped

- 1 (15-ounce/425g) can hominy, drained and rinsed
