- 1 lb udon (frozen and fresh kind recommended)
- 1/2 lb pork belly (sliced into 1/2-inch wide pieces)
- 1 cup green cabbage (thinly sliced )
- 3/4 cup button mushrooms (sliced)
- 1/2 cup carrots (julienned)
- 1/2 small onion (julienned)
- 1 green onion (finely chopped)
- 2 garlic cloves (minced)
- 1 tbsp vegetable oil (or any neutral oil)
- 1 tbsp dark soy sauce
- 1 tbsp regular soy sauce (or light soy sauce)
- 1 tbsp oyster sauce (or vegetarian stir-fry sauce)
- 1 tbsp mirin
- 1 tbsp rice vinegar (or apple cider vinegar / white vinegar)
- 2 tsp white granulated sugar (or cane sugar)
