Carrot Cake Breakfast Cookies
Ingredients
- 1. 1 c oats (gluten-free if necessary)
- 2. ¾ c whole wheat or gluten-free flour (measured correctly)
- 3. 1 ½ tsp baking powder
- 4. 2 tsp ground cinnamon
- 5. 1/8 tsp salt
- 6. 3 tbsp coconut oil or unsalted butter, melted and cooled slightly
- 7. 1 large egg, room temperature
- 8. 1 tsp vanilla extract
- 9. ½ c maple syrup or honey
- 10. 1 cup grated carrots
