- 1/2 Cup canola oil
- 1 Teaspoon chopped garlic
- 1 Teaspoon paprika
- 1 Teaspoon salt
- 2 large baking potatoes, peeled
- 3 shallots, peeled
- 1 egg
- Kosher salt and freshly ground black pepper, to taste
- Clarified butter or olive oil, as needed
- 1/4 Cup reduced lobster stock
- 1/4 Cup skim milk
- 8 quail eggs
- Chopped chives, for garnish
