Ingredients
- 2 pounds russet potatoes
- 1 cup milk
- 4 tablespoons butter
- 1/4 cup sour cream
- salt and peper to taste
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 jalapeno, seeded and minced
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 packet of your favorite taco seasoning
- 1/2 cup vegetable or beef stock (water may be used)
- 4 small tomatoes, diced (may use canned)
- 1 cup of corn kernels
- 1 cup cheddar cheese, grated
- 2 green onions, diced (for garnish, optional)
