Ingredients
- 450g pork belly strips cut into 3cm chunks
- 150g rice noodles cooked following pack instructions
- ½ tsp sesame oil
- 2 limes 1 juiced, 1 cut into wedges, to serve
- 5g coriander roughly chopped, plus extra to serve
- 1 iceberg lettuce or 2 Little Gem lettuce, leaves separated
- 1 carrot cut into thin strips (use a mandoline if you have one) 1/2 cucumber, cut into thin strips (use a mandoline, if you have one)
- chilli oil to serve (optional)
- 3 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tbsp maple syrup
- ½ tbsp rice wine vinegar
- 2 garlic cloves grated
- 5g ginger peeled and grated
