Cookies cream ice cream cake
Ingredients
- 175ml vegetable oil, plus extra for the tins
- 650ml cookie dough ice cream, softened
- 2 eggs, beaten
- 175ml buttermilk
- 170ml coffee (we used instant)
- 125g caster sugar
- 125g light brown soft sugar
- 90g cocoa powder
- 230g plain flour
- 2 tsp bicarbonate of soda
- 5g baking powder
- 150g crème-filled chocolate sandwich biscuits, chopped
- 50g dark chocolate, chopped
- 650ml double cream
- 1 tbsp golden syrup
- 4 tbsp icing sugar
