- 1 tbsp tamari or soy sauce

- 300g beef sirloin steak trimmed of hard fat and cut into long, thin strips
- 100g long-grain brown rice
- ⅓ cucumber cut into small cubes
- 2 medium carrots peeled and sliced into ribbons with a peeler
- 4 spring onions trimmed and diagonally sliced
- 100g radishes trimmed and sliced
- 20g coriander leaves roughly chopped, plus extra to garnish
- 10g mint leaves plus extra to garnish
- 1 tbsp cold-pressed rapeseed oil
- zest and juice 1 lime
- 25g unsalted cashew nuts toasted and roughly chopped
