Ingredients
- Empanada Dough:
- 3 cups flour
- 1 1/2 teaspoons salt
- 1 tsp baking powder
- 1/4 cup lard or shortening
- 1/2 to 3/4 cup warm water
- 1 egg yolk (use the white to brush the empanada before baking)
- Empanadas
- 1 to 1 1/2 lb chicken breast or thighs (~2 cups shredded cooked chicken)
- 1 cup shredded cheese (I like colby jack)
- 1 can refried beans
- 1 bay leaf
- 1 large onion, chopped
- 2 Tbsp chicken bouillon
- 1 Tbsp canola oil
- 1/2 tsp cumin
- 1 tsp red chili powder
- 1/2 tsp each of salt and pepper
- 1/4 cup chopped cilantro (optional)
