- 2 firm cucumbers
- 4 ripe tomatoes, cored and cut into bite sized pieces
- 1 large green pepper, cored and cut into bite sized pieces
- 1 small red onion, peeled and thinly sliced
- 4-6 oz feta cheese, cut into cubes
- 1/2 c pitted kalamata olives, sliced
- 1 tbsp chopped fresh oregano or 1/2 tsp dried oregano
- 1/4 c red wine vinegar
- Splash balsamic vinegar
- 2/3 c extra Virgin olive oil
- to taste Salt and pepper
