Ingredients
- 1 cup of israeli couscous (i used whole wheat variety)
- 1¼ cups water
- 2 ripe tomatoes, chopped finelly
- 1 small onion, diced finelly
- 1 bunch of parsley, minced (about ½ cup when done)
- ½ bunch of mint, minced (about ¼ cup when done)
- 1 tbsp lemon juice
- 1 tsp coarse salt
- ½ tsp freshly ground pepper
- ¼ cup extra virgin olive oil
