Ingredients
- 1 lg block of tofu
- 2 TB peanut oil
- 1/2 tsp. salt
- 1/2 TB sugar
- 1.5 TB soy sauce
- 1/2 tsp five spice powder
- 1/2 tsp chili sauce (tuong ot, preferably)
- 1/2 TB garlic, minced
- 1 cup vegetable stock
- 2 cups butter lettuce
- 2 cups basil (preferably lemon or anise basil)
- 2 cups cilantro
- 2 cups chrysanthemum leaves
- 4 cups bean sprouts, blanched briefly
- 4 cups cau lau noodles (or udon noodles), blanched briefly
- 4 thick pieces of rice paper, grilled or broiled until brown and crispy and broken into large chunks
- red chili peppers
- 1/2 cup rice wine vinegar
- 1/2 cup soy sauce
