- 3 tbsp. canola or olive oil
- 2-3 tbsp. fresh lemon juice
- 1 tsp. cumin
- 1/2 tsp. Kosher salt
- 1/4 tsp. black pepper
- 2-3 fresh tomatoes chopped
- 2 green onions, chopped (or 1/2 small white or red onion chopped)
- 6 sprigs fresh parsley, chopped
- 1 tsp. dried mint mint leaves
