- 2 quarts water, chicken stock or canned low-sodium chicken broth
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 cup vegetable oil
- 1 cup all-purpose flour
- 3 onions, chopped
- 2 ribs celery, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 tablespoon minced garlic
- 1/2 teaspoon cayenne, plus more to taste
- 2 bay leaves
- 1 1/2 pounds smoked sausage, such as andouille, halved lengthwise, then cut crosswise into half moons
- 1 pound fresh or thawed frozen okra, sliced 1/4 inch thick
- 1 bunch scallions, thinly sliced
- 1/3 cup fresh parsley leaves, chopped
