Ingredients
- 28 oz can diced tomatoes
- 3 large cucumbers, peeled and seeded; 2 cut in quarters, one cut into small dice
- 1 large red or yellow bell pepper, cut into small dice
- 1 small bunch cilantro, leaves and stems, washed well
- 1 large red onion, cut into small dice
- 2 cloves garlic, peeled and mashed
- 2 small slices stale bread, toasted and rough chopped (I use rye bread)
- salt, pepper, sugar and red pepper flakes, to taste
- Lemon or lime juice, to taste
