- 1 cup (165g) black beans (cooked and drained)
- 1 cup (175g) corn kernels
- 1/2 cup (75g) red bell pepper (diced)
- 1/4 cup (40g) red onion (finely chopped)
- 3-4 cloves garlic (minced)
- 1 tablespoon paprika or smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon Salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons (30ml) olive oil
- A handful Fresh cilantro (chopped (for garnish))
