Sesame Noodles with Spicy Pickled Shrimp
Ingredients
- For the Noodles
- 1 pound linguine
- 1/4 cup soy sauce
- 3 tablespoons sesame oil
- toasted sesame oil, for drizzling
- 1/2 cup shredded green cabbage
- 1 scallion, sliced (white and green parts)
- 1 tablespoon rice wine vinegar
- For the Pickled Shrimp
- 1 pound fresh shrimp, peeled and cleaned
- 1/2 pound sugar snap peas, trimmed and cut in half
- 1 teaspoon each of whole fenugreek, fennel seed, coriander seed, black peppercorns, and cloves
- 1/2 cup neutral oil, such as grapeseed
- 1/4 cup champagne vinegar
- 2 teaspoons salt
- 1 teaspoon sugar
- 1/2 teaspoon ground mustard
- 1/2 teaspoon crushed red pepper flakes
- 1 onion, thinly sliced into half moons
