Ingredients
- For the Pulled Pork
- 1 ½ to 2 kilos pork shoulder, deboned and scored
- 2 tbsp rapeseed oil
- 3 x 2 inch pieces of cassia bark or cinnamon
- 4 green cardamom pods, cracked
- 6-8 whole dried red chillies
- 500ml chicken stock
- For the Sauce
- 2 red onions, finely chopped
- 3 inches ginger, peeled and finely chopped
- 2 tsp chilli powder
- 3 tsp ground cumin
- 4 tsp ground coriander
- 400g tinned chopped tomatoes
- 2 tsp fresh coriander, chopped
- For the Potato Topping
- 5 large potatoes, peeled, chopped and boiled
- Handful chopped coriander
- 3-4 egg yolks
- 1-2 green chillies, finely chopped
- Salt and pepper
- Knob of butter
- Dash of cream
