- 2 oz mushrooms (sliced) (for 1 cup)
- 1/4 cup unbleached, all-purpose flour
- 2 cup beef broth ( or chicken stock)
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/2 tsp dried rubbed sage
- 1/4 tsp black pepper (plus more to taste)
- 1 cup frozen peas (or green beans)
- 6 russet potatoes (peeled and chopped)
- 1/2 cup butter
- 1 cup milk
- 4 oz cheddar cheese (shredded) ((1 cup))
- additional salt and pepper
