Red White and Green Soup
Ingredients
- 3 tablespoons olive oil
- 2 medium shallots, minced
- 3 cloves garlic, minced
- 1/2 teaspoon dried basil leaves
- 1/2 teaspoon dried rosemary leaves
- 1/2 teaspoon dried oregano leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons tomato paste
- one 14 1/2 ounce can Italian plum tomatoes
- 1/2 cup dry white wine
- 6 cups rich chicken broth
- 3 cups cooked white beans (Great Northern or Cannellini) or two 14 1/2 ounce cans, drained and rinsed
- 8 ounces fresh baby spinach leaves (stemmed)
- 1/4 cup thinly sliced fresh basil leaves
- Salt and pepper for re seasoning if you feel you need to
- Freshly grated Parmesan for garnish(optional)
