- 2 medium eggs, beaten
- 100 g panko breadcrumbs
- 1 tsp. vegetable oil
- 1 onion, finely chopped
- 3 cm piece fresh root ginger, peeled and finely grated
- 2 garlic cloves, crushed
- 1 tbsp. medium curry powder
- 500 mL chicken or vegetable stock
- 1 tbsp. runny honey
- Pak choi, wilted, to serve
