- 1 (1-inch) piece ginger, peeled and minced
- 1 carrot, peeled and cut into ¼-inch cubes
- 1 (8 oz.) can whole water chestnuts, drained and cut into ¼-inch cubes
- 12 oz. mixed mushrooms (such as cremini, shiitake, and oyster), cut into ½-inch pieces
- 2 Thai chiles, thinly sliced
- 1/2 c. roasted unsalted peanuts, roughly chopped
- 1/4 c. thinly sliced scallions
