Ingredients
- 3/4 cup bulgur
- 3/4 cup boiling water
- 3 cups tomatoes (chopped {for me it was 5 medium tomatoes})
- 5 green onions (green and white parts chopped)
- 1/2 of an english cucumber (diced {about 2 1/2 cups})
- 1/4 cup fresh mint (finely chopped)
- 1 bunch fresh parsley (finely chopped)
- 6 ounces of kale
- 1/4 cup lemon juice (approximately 1 lemon juiced)
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
