- one bunch fresh parsley (finely chopped (1.5 to 2 cups))
- 2 tbsp mint leaves (finely chopped)
- salt to taste
- 1/4 to 1/2 tsp black pepper
- 1/4 cup lemon juice or more
- 1 tbsp extra virgin olive oil
