- 1/4 cup bacon fat (or olive oil, not EVOO)
- 3 pounds grass-fed chuck roast, cubed
- 1 large onion, chopped (~2 cups)
- 1 large red bell pepper, chopped
- 1 handful garlic cloves, peeled and rough chopped
- 1 pound grass-fed ground beef
- 2 tablespoons Penzey's Chili 9000
- 2 15 ounces cans fire-roasted diced tomatoes with chipotle
- 2 15 ounces cans fire-roasted diced tomatoes with green chiles
- 1 6 ounces can tomato paste
- 1 cup beef broth
- salt and pepper to taste
