Ingredients
- 1 box Jiffy cornbread mix (it really is the best!)
- 1 heel of bread, or 2 slices
- 1 cup celery, diced
- 1 cup yellow onion, diced
- 1/2 thin-skinned red apple, unpeeled and diced (I use Honeycrisp)
- 4 whole scallions, ends trimmed and finely chopped
- 1/2 cup plus 2 tablespoons salted butter
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper, plus more to taste
- 2 teaspoon ground sage, plus more to taste
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon smoked paprika
- 3 large eggs
- 1/3 cup whole milk
- 1 1/2 cup chicken or vegetable stock
