- 6 cups cauliflower "rice" (store bought or homemade) **
- 4 Tablespoons extra virgin olive oil
- 8 ounces cherry tomatoes, quartered
- 1 organic cucumber, cut into 1/4-inch dice
- 1/2 cup kalamata olives, sliced
- 2 cups flat-leaf parsley leaves, finely chopped
- 1 cup mint leaves, finely chopped
- 2 scallions, white and pale green parts only, sliced
- 3 lemons ( finely grated zest and juice)
- Salt and pepper to taste
