Ingredients
- 3 cups whole milk
- 1 (7 1/2 ounce) box corn muffin mix
- 2 tablespoons butter
- 1 onion, diced
- 2 garlic cloves, minced
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon oregano
- 2 quarts chicken broth
- 1 1⁄2 lbs chicken breasts, cut in 1/2 inch pieces
- 2 medium sweet potatoes, cut in 1/2 inch pieces
- 1 cup shredded monterey jack cheese
- 3 cups frozen corn
- 1⁄4-1⁄2 cup fresh parsley, chopped
