Chipotle Sweet Potato Taco Bake
Ingredients
- 1 medium onion
- 1 lb ground beef (85% lean)
- 1 tsp kosher salt
- 1 tsp chipotle powder
- 1 tsp chili powder
- ½ tsp cumin
- 1 15-oz can fire-roasted tomatoes
- 1 15-oz can kidney beans (drained and rinsed)
- 2 cups frozen sweet corn (thawed)
- 1 ½ lb sweet potatoes (sliced ⅛ to ¼-inch thick)
- 1 tbsp neutral oil (grapeseed, avocado, or vegetable)
