Orzo and Mini Sausage Meatballs
Ingredients
- 1 tbsp. olive oil
- 3 links Italian sausage, casings removed
- 2 cloves garlic, minced
- 1 cup orzo pasta, uncooked
- 1 3/4 cup unsalted chicken broth
- 1/4 cup heavy cream
- 1/4 tsp. each salt and pepper
- 2 heaping cups spinach, roughly chopped
- Juice from 1/2 lemon
- Freshly grated parmesan cheese, for serving
