- 2 tbsp. olive oil
- 25 g (1oz) butter
- 1 (2lb 5oz) gnocchi
- 250 g (9oz) chestnut mushrooms, sliced
- 4 smoked bacon rashers, sliced
- 1 tsp. dried thyme
- 50 mL (2 fl oz) brandy, optional
- 175 mL (6 fl oz) double cream
- 50 g (2oz) baby spinach
