- 1 1/2 pounds boneless beef chuck or short ribs, cut into 2-inch cubes
- 1 medium red onion, finely chopped, divided
- 1 cup chana dal (split hulled chickpeas), soaked at least 1 hour (or up to overnight), drained
- 1 tablespoons ginger paste or freshly grated ginger
- 1 tablespoon garlic paste or freshly grated garlic
- 8 to 10 black peppercorns
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon Kashmiri or other red chile powder
- 1/2 teaspoon ground cardamom (optional)
- 1/4 teaspoon ground turmeric
- 1 teaspoon salt
- 2 to 3 Thai green chiles, chopped
- 3 tablespoons chopped cilantro
- 1 teaspoon cumin seeds
- 2 large eggs
- 1/2 cup vegetable oil, plus 2 tablespoons for forming the kebabs
- Store-bought or homemade mint chutney, for serving
- Naan, roti or parathas (optional), for serving
